The rice takes its name from Jeera Seeragam in Tamil. The small ovular grains share an uncanny resemblance to jeera. Samba refers to the season this rice is grown. It wasn’t easy to find this rice everywhere. It has to be sourced from traditional ‘rice merchants’ about a decade ago. Thankfully that’s changed Seeraga Samba is just one click away. It retains its texture and does not thicken into lumps. It’s less fluffy and absorbs the flavour of the masala.
It is known as Jeerasal and Khaima arisi. The rice’s ability to absorb large quantities of water without turning mushy makes it ideal for biryani aside from its unique fragrance.
